With reference to item #3, looking for something to cover up the vacant holes after removing the sissy bar, I used bicycle handlebar end caps. A spare set typically comes with the purchase of new handlebar tape ($5 - $15). However, any local bikie usually has several sets floating around since they never really wear out, or you might try to sweetalk a mechanic at the local bike shop. They just throw them away anyway.
